In gumbo, file is typically used as a thickening agent and to bring a mild bitter flavor to it. It usually takes a back seat to other flavors, like onion, garlic, sausage, black pepper and cayenne, so it doesn’t bring a ton of flavor but it should connect that flavors and add a little bitter snap to it. We believe we have found the highest quality organic sassafras leaves out there and we grind it fresh.
